Ingredients

  • 2 to 3 lb. ground chuck
  • 1 large onion
  • 1 to 2 cloves garlic
  • 1 tsp. chili powder
  • red pepper to taste
  • 1 can peeled tomatoes
  • 1 can large tomato sauce
  • 1 can kidney beans (16 oz.)
  • 1 can pinto beans (16 oz.)
  • 1 can Old El Paso (mild) enchilada sauce
  • salt and pepper to taste
  • beer (optional)

Directions

    Chop onion.

    In large 8-quart pan, cook chuck; remove all grease.

    Add all ingredients and simmer until well blended, 4 hours or until tomatoes are cooked down.

    It's overcooked if chuck loses its coarse texture.
