- 1 lb. fresh carrots
- 1/4 c. chopped scallions
- 2 Tbsp. chopped fresh parsley
- 1/3 c. salad oil
- 2 Tbsp. fresh lemon juice
- 1/2 tsp. salt
- fresh ground pepper to taste
Directions

1Scrub carrots and peel, if desired.

2Cut carrots in half crosswise, then cut into long slices.

3Cook carrots in small amount of boiling salted water in covered saucepan until just tender.

4Drain, if necessary.

5Cool.

6Combine remaining ingredients; toss with carrots.

7Chill, covered, for several hours.
