  • 1 medium cucumber
  • 1/4 c. butter or margarine
  • 1 (4 oz.) can pimento, diced
  • 1 1/4 tsp. salt
  • 1/4 c. ketchup
  • 1 c. milk
  • 2 tsp. cornstarch
  • 2 Tbsp. dry sherry
  • 6 c. hot fluffy white rice
