Chinese Broccoli Beef

Ingredients
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1/2 teaspoon garlic powder
- 1 cup low sodium beef broth
- 2/3 cup reduced sodium soy sauce
- 1 tablespoon brown sugar
- 2 tablespoons minced ginger
- 2 large minced garlic cloves
- 1 lb boneless steak, cut into thin three inch strips (flank or skirt work well)
- 2 tablespoons vegetable oil, divided
- 2 dashes sesame oil, divided
- 4 -6 cups broccoli florets
- 1 dash salt and pepper, to taste
- 1 medium onion, cut into wedges
- 16 ounces cooked cauliflower rice (great for a low carb dinner) or 16 ounces cooked rice
Directions

1Make sauce/marinade:

2In a bowl, combine beef broth, soy sauce, brown sugar, ginger, and garlic until smooth.

3Add beef and marinate for 30 minutes.

4In a bowl, combine 2 tablespoon cornstarch, 2 tablespoons water and 1/2 tsp garlic powder until smooth.

5Remove beef from marinade; add it to the cornstarch mix bowl and toss.

6In a large skillet or wok over medium high heat, stir-fry beef in 1 tablespoon veggie oil (and a dash of sesame oil) until beef reaches desired doneness; remove and keep warm.

7Stir-fry broccoli and onion in 1 tablespoon oil (and a dash of sesame oil) for 4-5 minutes. Salt and pepper to taste.

8Return beef to pan.

9Add meat marinade to the pan.

10Cook and stir for 2 minutes.

11Serve over rice.
