- 2 eggs, beaten
- 2 large onions, chopped
- 2 tsp. oil
- 1/4 c. soy sauce
- 3 stalks celery, chopped
- 1 green pepper, chopped
- 1 garlic, minced
- 3 green onions, chopped
- 1 c. instant rice
- 1 c. boiling water
Directions

1Spray skillet.

2Add eggs on low heat without stirring.

3Let eggs set.

4Break up with fork.

5Remove and reserve.

6Combine 2 onions and 2 tablespoons of soy sauce; cook and stir until onions are golden brown.

7Add remaining ingredients and heat to a boil. Reduce and simmer for 1 minute.

8Stir in egg.

9Remove, cover and let stand for 5 minutes.
