- 4 chicken breasts
- 1 Tbsp. vegetable oil
- salt
- 1 large garlic, pressed and minced
- 1/2 c. chopped onion
- 1 tsp. ground ginger
- 1 (20 oz.) can pineapple slices (save all juice)
- 1/4 c. juice from can of pineapple
- 2 Tbsp. cornstarch
- 1/2 c. chicken broth
- 1/4 c. soy sauce
- 2 Tbsp. honey
- 1/2 tsp. cinnamon
Directions

1Brown chicken in vegetable oil and salt.

2Add garlic, chopped onion and ginger; saute.

3Drain pineapple; save juice.

4Mix 1/4 cup juice and cornstarch.

5Mix remaining juice with chicken broth, soy sauce, honey and cinnamon.

6Pour over chicken.

7Simmer for 30 minutes, covered, until chicken is tender.

8Stir cornstarch mixture in and cook until thickened.

9Add pineapple.
