- 3 Tbsp. oil
- 1 c. rice
- 1/4 c. onion, chopped
- 1/4 c. celery, chopped
- 4 Tbsp. soy sauce
- 1/2 c. pine nuts or almonds
- 2 c. chicken broth
Directions

1Heat oil in heavy skillet.

2Add rice and stir until golden. Add onions, green pepper and celery.

3When vegetables are limp, add soy sauce.

4Add chicken stock and nuts.

5Cover and cook until rice is fluffy and the moisture is absorbed or this can be baked in a 350° oven for 45 minutes.

6This freezes well.
