  • 3 Tbsp. oil
  • 1 Tbsp. soy sauce
  • 1 tsp. lime juice
  • 1/2 tsp. sugar
  • 1/8 tsp. pepper
  • 1 clove garlic, minced
  • 1/2 c. sliced green onions
  • 12 oz. fresh spinach, washed and torn in bite size pieces
  • 1/4 c. sliced water chestnuts
  • 1 jar (2 oz.) sliced and drained pimiento

Directions

    Heat oil, soy sauce, lime juice, sugar and pepper in large skillet.

    Add garlic.

    Stir-fry over medium high heat about 1 minute or until garlic is light brown.

    Add onion; stir-fry 1 minute.

    Add spinach, water chestnuts and pimiento.

    Stir-fry 2 to 3 minutes or until spinach is tender.

    Serves 4 to 6.
