Chinese Style Quick Steamed Fish

  • 2 lb. whole fish
  • 1 tsp. sugar
  • 1 tsp. salt
  • 2 Tbsp. sherry
  • 2 Tbsp. soy sauce
  • 1 Tbsp. vegetable oil
  • 1 onion, sliced
  • 1/4 c. sliced ginger
  • 1 Tbsp. Chinese black beans
  • 8 oz. Lup Cheong, sliced
  • 1 bunch Chinese parsley
  • chopped green onion

Directions

    Combine first 6 ingredients.

    Rub fish inside and out and let sit 20 minutes to 1 hour.

    Lay fish in shallow dish.

    Stuff cavity with the next 5 ingredients.

    Cover with plastic wrap and microwave on High for 12 minutes or until opaque and glazed.

    Sprinkle with chopped green onions and serve.
