- 1 teaspoon vegetable oil
- 2/3 cup white basmati rice
- 1 lime, juice of
- 1 cup water
- 1/2 teaspoon salt
- 2 teaspoons fresh cilantro, chopped
Directions

1In a 2-qt. heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted.

2Add rice and lime juice, stir for one minute.

3Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to a simmer over low heat until rice is tender and water is absorbed, about 25 minutes.

4Fluff rice with a fork and stir in cilantro.
