Ingredients

  • 4 boneless, skinless chicken breasts, cooked and cut into bite size pieces
  • 1 small onion, finely chopped
  • 2 Tbsp. oil
  • 1/2 c. chicken broth
  • 12 corn tortillas, cut in 1-inch strips
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 c. milk
  • 1 c. shredded Cheddar cheese
  • 1 3 1/4 oz. can diced green chili peppers

    Saute onion in oil.

    Add soups.

    Stir until smooth.

    Add milk and cheese.

    Stir until cheese is melted.

    Add chicken broth and chilies.

    Place a layer of tortilla strips on the bottom of a greased 2-quart casserole dish.

    Pour some sauce on that and add a layer of chicken.

    Repeat, ending with sauce.

    Bake at 350° for 35 to 45 minutes.
