  • 10 lb. chitterlings, thawed
  • 1/4 c. vinegar
  • 2 bay leaves
  • 2 large onions, chopped
  • 2 stalks celery (with tops), chopped
  • 7 red pepper pods, sliced or crushed or red pepper to taste
  • 2 large potatoes, quartered
  • 4 cloves garlic (more, if you wish)
  • salt and pepper to taste
  • any other seasonings you wish

Directions

    Wash chitterlings thoroughly.

    Remove excess fat and grit. Place in a large pot with vinegar and seasonings. Cover with water.

    Bring to a boil.

    Place lid on pot and simmer 3 or 4 hours until tender.

    Serve with spaghetti, cornbread and slaw.
