- 10 lb. chitterlings, thawed
- 1/4 c. vinegar
- 2 bay leaves
- 2 large onions, chopped
- 2 stalks celery (with tops), chopped
- 7 red pepper pods, sliced or crushed or red pepper to taste
- 2 large potatoes, quartered
- 4 cloves garlic (more, if you wish)
- salt and pepper to taste
- any other seasonings you wish
Directions

1Wash chitterlings thoroughly.

2Remove excess fat and grit. Place in a large pot with vinegar and seasonings. Cover with water.

3Bring to a boil.

4Place lid on pot and simmer 3 or 4 hours until tender.

5Serve with spaghetti, cornbread and slaw.
