- No. 10 bucket or 2 lb. chitterlings
- 3 qt. water
- 1 tsp. salt
- 1/2 tsp. red pepper flakes
- 1 medium onion
- 1/4 lb. butter or margarine
Directions

1Cook chitterlings for 1 hour or until tender.

2Drain off water and remove onion.

3Prepare iron skillet with margarine.

4Cut chitterlings in 2-inch pieces and fry until golden brown.

5Serve with your favorite side dishes, such as macaroni and cheese, rice or greens.

6Hot sauce is also offered.

7Store leftovers in refrigerator.
