- 1 (5 lb.) bucket chitterlings
- 1 to 2 Tbsp. salt
- 1/4 tsp. ground red pepper
- 2 eggs, slightly beaten
- 2 Tbsp. flour
- 1 (5 1/4 oz.) can evaporated milk
Directions

1Place chitterlings in Dutch oven and add enough water to cover.

2Add salt and red pepper and mix.

3Cover and cook over medium heat for 1 hour or until fork-tender.

4Drain well.

5Mix together the eggs, flour and evaporated milk to make batter. Dip chitterlings in batter to coat and fry in hot oil in large skillet to brown, turning once.

6Serve hot.

7Yields 8 to 10 servings.
