  • 1 lb. boneless, skinless chicken breast
  • 2 Tbsp. vegetable oil
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. melted butter
  • 1/2 c. chopped celery
  • 1/2 c. chopped red pepper
  • 1/2 c. chopped onion
  • 2 Tbsp. packed brown sugar
  • 1 c. catsup

Directions

    Chop chicken into bite sized pieces.

    Heat oil.

    Mix flour, salt and pepper.

    Batter chicken with it.

    Simmer in fry pan with the oil.

    Mix remaining ingredients and add to browned chicken. Simmer in covered pan for 30 minutes.

    Serve with rice.
