- 1 lb. boneless, skinless chicken breast
- 2 Tbsp. vegetable oil
- 1/2 c. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. melted butter
- 1/2 c. chopped celery
- 1/2 c. chopped red pepper
- 1/2 c. chopped onion
- 2 Tbsp. packed brown sugar
- 1 c. catsup
Directions

1Chop chicken into bite sized pieces.

2Heat oil.

3Mix flour, salt and pepper.

4Batter chicken with it.

5Simmer in fry pan with the oil.

6Mix remaining ingredients and add to browned chicken. Simmer in covered pan for 30 minutes.

7Serve with rice.
