Chive Potato Pancakes

  • 1 1/4 lb potatoes, peeled, coarsely grated
  • 3 tbsp fresh chives, finely chopped
  • 1/2 cup sour cream
  • 2 tbsp olive oil

    Preheat oven to 350°F. Press grated potatoes between layers of paper towels to remove as much moisture as possible.

    Combine grated potatoes, chives and sour cream in a large bowl. Shape into 8 - 3 inch patties.

    Heat oil in a large frying pan over medium-high heat. Working in batches, cook patties until browned on both sides. Arrange in a single layer on prepared tray and bake for 20 mins, or until cooked through.
