- 4 large idaho potatoes
- 14 cup margarine
- 1 (3 ounce) packed light cream cheese
- 13 cup chopped chives
- 14 cup skim milk
- 12 teaspoon salt
- 14 teaspoon pepper

1Scrub potatoes; pierce several times with a fork.

2Wrap each potato in a microwave-safe paper towel; arrange potatoes 1 inch apart.

3Microwave at HIGH 12 to 14 minutes.

5Slice away skin from to of each potato; carefully scoop out pulp, leaving shells intact.

6Mash pulp.

7Combine margarine and cream cheese in a medium microwave-safe glass bowl.

8Microwave at HIGH 30 to 40 seconds, or until cream cheese is softened.

9Add potato pulp, chives, milk, salt and pepper, mixing well.

10Stuff potato shells with potato mixture.

11Place stuffed potatoes on paper towels.
