  • 250 g flour
  • 2 teaspoons baking powder
  • 125 g unsalted butter, softened
  • 250 g caster sugar
  • 4 bananas, ripe, mashed
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 175 g chocolate chips (dark or milk, good quality is a must!)

    Preheat the oven to 180c/350F/Gas4.

    Sift flour and baking powder into a bowl.

    In a separate bowl combine the butter, sugar, eggs and vanilla.

    Stir in the chocolate chips.

    Gently combine the wet and dry ingredients - careful not to overmix (or the end result will be a tough and dry loaf).

    Pour batter into a nonstick or lightly greased 19x11cm (7 1/2 x 4 1/2 inch) loaf pan.

    Bake 1 hour and 15 minutes or until skewer inserted comes out clean.

    Remove from oven.

    Leave to cool in tin for 5 minutes before turning out on a wire rack to cool.

    Serve in thick slices with creamy butter!
