- 2 3/4 cups flour
- 3/4 tablespoon baking powder
- 7/8 teaspoon baking soda
- 2/3 cup sugar
- 2 3/4 tablespoons cocoa bittersweet, powdered
- 7 3/4 tablespoons butter melted
- 3 eggs lightly beaten
- salt
- 1 cup almonds with the skin
Directions

1Preheat the oven to 170C.

2Briefly toast the almonds, with their skin, in a very hot oven for no longer than 5 minutes and set them aside.

3Sift the flour with the baking powder, baking soda, and two pinches of salt.

4Add the cocoa.

5Place the dry ingredients in the mixer bowl or knead by hand.

6Mix quickly until all the ingredients are combined well.

7Add the sugar, eggs, and the butter.

8Turn the mixer on each time an ingredient is added until the ball of dough is soft and uniform in consistency.

9Remove the dough from the mixer bowl, place it on the work surface and incorporate the almonds.

10Shape the dough into two loaves and place them on a wax paper-lined baking sheet.

11Bake for approximately 30 minutes.

12Remove the biscotti from the oven, let them cool slightly and place them on a wire rack and as soon as the loaves have cooled completely, slice them on a bias.
