  • 1 1/2 c. sugar
  • 1 3/4 c. unbleached sifted flour
  • 3/4 c. cocoa
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 eggs
  • 1 c. skimmed evaporated milk (full strength)
  • 1/2 c. canola oil
  • 2 tsp. vanilla
  • 1 c. boiling water
  • whipped cream and maraschino cherries with stems (optional)

Directions

    Grease and flour 2 (9-inch) or 1 (13 x 9-inch) pan and set aside.

    Sift all dry ingredients together and add eggs, milk, oil and vanilla.

    Mix for two minutes with electric mixer.

    Stir in boiling water by hand.

    Mix will be thin.
