- 12oz Chocolate
- 2 1/2 cup 35% cream
- 6 Tbsp sour cream
- 6 egg yolks
- 3/4 sugar syrup (3 cups cold water and 2 1/4 cups sugar)
Directions

1-Melt chocolate; keep warm

2-Whip cream with sour cream

3-Place egg yolks in metal bowl

4-Heat simple syrup to boiling and beat constantly with whisk, pouring boiling syrup in a steady stream over yolks

5-Continue whisking until mixture is thick and forms ribbon and tripled in volume (about 15 minutes)

6-Remove from heat and beat in electric mixer (double volume and cool)

7-Beat in warm chocolate and combine well.

8-Stir in 1/3 cream into chocolate mixture, then fold in the rest.
