Chocolate-Cherry Cakes

  • 1 c. brown sugar
  • 2 sq. baking chocolate, melted and cooled
  • 1/2 c. shortening
  • 1 egg, well beaten
  • 1/2 c. milk
  • 1 1/2 c. flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 c. pecans, cut in large pieces
  • 20 maraschino cherries, cut in thirds

Directions

    Cream shortening; add sugar and cream well.

    Add eggs and beat well.

    Sift dry ingredients and add alternately with milk, beating well.

    Lastly, add cooled melted chocolate, nuts and cherries. Mix well.

    Drop by tablespoon on greased and floured cookie sheet. Bake at 350° for 20 to 25 minutes.

    Frost with chocolate frosting while still slightly warm.

    Makes 20 cakes.
