Chocolate Chip Mint Parfaits

  • 1/3 cup margarine or butter
  • 3 Tbsp. sugar
  • 1-1/2 cups milk
  • 1 tsp. peppermint extract
  • 1/2 cup chocolate
  • 2-1/2 cups COOL WHIP Whipped Topping

Directions

    Mix graham cracker crumbs, margarine or butter and sugar; set aside.

    Prepare cheesecake according to package directions using milk, mint extract and food coloring if desired.

    Stir in chips; set aside.

    Reserve 1 tablespoon crumb mixture for garnish.

    In 6 (8-ounce) parfait or water glasses, layer half the cheesecake filling, remaining crumb mixture and 2 cups whipped topping; top with remaining cheesecake filling.

    Refrigerate 1 hour.

    Garnish with remaining 1/2 cup whipped topping, reserved crumbs and candies.
