- 2 oz. unsweetened baking chocolate
- 3/4 c. confectioners sugar, sifted
- 3 Tbsp. unsweetened cocoa powder, sifted
- 3 large egg whites
- 1/2 tsp. cream of tartar
- 1/2 c. white sugar
Directions

1Line cookie sheets with aluminum foil.

2Finely chop baking chocolate in blender and set aside.

3Stir together confectioners sugar and cocoa powder with a wire whisk and set aside.

4In bowl, beat egg white and cream of tartar with an electric mixer at medium speed until thickens.

5Increase to high speed and slowly add white sugar.

6Beat until stiff peaks form.

7Gently fold in cocoa mixture and chocolate until mixture is uniformly brown. Drop by rounded teaspoonfuls onto cookie sheet.

8Preheat oven to 200°.

9Let cookies dry at room temperature for approximately 45 minutes.

11200° for 1 hour.

12Store in airtight container. Makes about 2 1/2 dozen.
