Name: Chocolate Cupcakes
Ingredients: 1/2 + 1/3 c. flour; 3/4 c. sugar; 1/4 c. cocoa; 3/4 tsp. baking soda; 1/2 tsp. salt; 1/4 tsp. baking powder; 1 egg; 1/4 c. shortening; 3/4 c. buttermilk; 1/2 tsp. vanilla; Chocolate Frosting (recipe follows)

3/4 c. sugar
1/4 c. cocoa
3/4 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1 egg
1/4 c. shortening
3/4 c. buttermilk
1/2 tsp. vanilla
Chocolate Frosting (recipe follows)

Directions

Heat oven to 350°.

Mix dry ingredients.

Mix egg, shortening, buttermilk and vanilla; add to dry ingredients.

Beat on low speed for 1 minute, then on high speed for 3 minutes.

Fill muffin cups 3/4 full.

(Muffin tins lined with cupcake papers work the best.) Bake approximately 15 minutes or until a toothpick inserted in the center comes out clean.

Top with Chocolate Frosting.
