- 1/2 + 1/3 c. flour
- 3/4 c. sugar
- 1/4 c. cocoa
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. baking powder
- 1 egg
- 1/4 c. shortening
- 3/4 c. buttermilk
- 1/2 tsp. vanilla
- Chocolate Frosting (recipe follows)
Directions

1Heat oven to 350°.

2Mix dry ingredients.

3Mix egg, shortening, buttermilk and vanilla; add to dry ingredients.

4Beat on low speed for 1 minute, then on high speed for 3 minutes.

5Fill muffin cups 3/4 full.

6(Muffin tins lined with cupcake papers work the best.) Bake approximately 15 minutes or until a toothpick inserted in the center comes out clean.

7Top with Chocolate Frosting.
