Chocolate Dream Icing

Ingredients

  • 3 oz. unsweetened chocolate (3 sq.)
  • 1 c. whipping cream
  • 1 1/4 c. granulated sugar
  • 1 stick butter (not oleo)
  • 1 tsp. vanilla

Directions

    Chop chocolate into small pieces; set aside.

    Combine cream and sugar in large 3-quart heavy saucepan.

    Stir with wooden spoon over medium heat until mixture boils (full boil).

    Reduce heat and simmer 6 minutes.

    Remove from heat; stir in chocolate until melted.

    Stir in butter until melted.

    Add vanilla.

    Place pan in ice water to chill.

    Stir frequently until cool.

    Then beat with wooden spoon until very thick and spreadable.

    frosting for a 2 layer cake.

    I like to put a thin amount between layers and put 1/2 cup raspberry jam on it between layers.
