Chocolate Easter Eggs

  • 3 sq. Baker's chocolate
  • 3 Tbsp. butter
  • 1/3 c. mashed potatoes
  • 1/8 tsp. salt
  • 1 tsp. vanilla
  • 1 lb. powdered sugar
  • 6 oz. semi-sweet chocolate chips

Directions

    Melt Baker's chocolate in top of double boiler, then set aside to cool.

    Mix together butter, mashed potatoes, salt and vanilla. Gradually add sugar, then add chocolate.

    Form into shape of 2 eggs.

    Melt semi-sweet chocolate in double boiler and cover eggs. Refrigerate until chocolate hardens.
