- 1 c. water
- 1/2 c. butter or margarine
- 1 c. flour
- 4 eggs
Directions

1Heat oven to 400°.

2Heat water and butter to rolling boil in saucepan.

3Stir in flour over low heat, stirring vigorously, until mixture forms ball (about 1 minute).

4Remove from heat.

5Beat in eggs thoroughly, one at a time.

6Beat until smooth.

7Shape with a spatula into 12 fingers, each 4 inches long and 1-inch wide.

8Bake for 45 to 50 minutes, or until puffed golden brown and dry.

9Cool slowly away from drafts.

10Cut off tops; scoop out filaments of soft dough.

11Fill Eclairs with Custard Filling.

12Frost tops with Chocolate Icing.
