Chocolate Flourless Cake

  • 1 c. chocolate chips
  • 1 c. butter
  • 1 c. sugar
  • 4 eggs

    In a double boiler, melt chocolate chips, then add butter and melt. Separate eggs and add 1/2 cup sugar to the yolks and mix. Beat the egg whites until soft peaks form.

    Continue beating while adding remaining sugar until egg whites are shiny. Add chocolate mixture to the egg yolks and beat on high speed with hand mixer. Gently fold the egg whites into the chocolate mixture.

    Pour into round 10-inch pan (pie or cake). Bake in a 375° oven for 45 minutes.
