Chocolate Lychees

- 1 x 18 oz can pitted lychees, drained
- 4 pieces candied ginger, finely chopped
- 7 oz dark chocolate, coarsely chopped
- None None Rose petals, to serve (optional)
Directions

1Line a baking sheet with parchment paper. Pat lychees dry with paper towel. Push a little ginger into center of each lychee.

2Place chocolate in a heatproof bowl over a saucepan of simmering water 5 minutes, stirring until chocolate melts. Remove bowl from heat and, working quickly, dip lychees into chocolate, one at a time. Place onto prepared sheet and chill for 1 hour.

3Place each lychee on a rose petal, if using, and serve.
