Chocolate Mousse

Ingredients
- 4 oz. semi-sweet chocolate
- 4 egg yolks
- 1/8 lb. butter
- 1 tsp. vanilla extract
- 1 tsp. brandy
- 4 egg whites
- 6 Tbsp. sugar
Directions

1Pour chocolate into saucepan and cover with 2 inches of hot tap water.

2Cover with lid and let stand 3 to 5 minutes. Chocolate should be soft.

3Drain off water.

4Add the egg yolks; stir with a whisk and cook over low heat until it thickens. Remove from the heat.

5Add the butter, vanilla and brandy.

6Set aside to cool.

7Beat the egg whites until they form soft peaks. Add sugar slowly while beating with electric mixer at high setting.

8Keep beating until stiff peaks are formed.

9Take 1/4 egg mixture and put into the cooled chocolate mixture.

10Mix well.

11Fold the remaining egg whites into the chocolate mixture.

12Pour into individual dishes.

13Cover with plastic wrap and refrigerate.
