Ingredients

  • 3/4 cup (175 mL) granulated sugar
  • 1/2 cup (125 mL) unsweetened cocoa powder
  • 1/4 cup (50 mL) water
  • 1 tbsp (15 mL) instant coffee granules
  • 5 eggs, separated
  • 1/4 tsp (1 mL) salt
  • 2 tbsp (25 mL) orange flavored liqueur (or 2 tbsp/25 mL fortified orange juice concentrate)
  • 1/4 cup (50 mL) toasted sliced almonds (see Notes)

Directions

    In a small saucepan, stir together sugar, cocoa, water and coffee granules; cook over medium heat, stirring frequently, for 3 to 4 minutes, or until smooth and thickened.

    Beat egg yolks; whisk into cocoa mixture and cook for about 1 minute.

    Let cool.

    Meanwhile, in a clean bowl, using an electric mixer, beat egg whites and salt on high speed until stiff peaks form.

    Stir orange-flavored liqueur into cooled cocoa mixture Fold in egg whites.

    Spoon into glass dishes, demitasse cups or wine glasses Sprinkle with toasted almonds.
