Chocolate, Nut And Cornflake Bars

  • 1/2 cup butter, coarsely chopped
  • 1/2 cup granulated sugar
  • 1/3 cup light corn syrup
  • 1/2 cup crunchy peanut butter
  • 7 cups cornflakes
  • 12.5 oz milk chocolate, melted

Directions

    Grease an 8x12 inch rimmed baking pan. Line base and long sides with parchment paper, extending paper 2 inches over sides.

    In a large saucepan, stir butter, sugar, corn syrup and peanut butter over low heat until sugar dissolves. Bring to a boil then reduce heat and simmer, without stirring, for 5 mins. Fold in cornflakes then transfer to prepared pan, pressing firmly into pan. Chill for 30 mins, or until set.

    Spread melted chocolate over cornflake mixture and let stand at room temperature until set. Serve cut into bars.
