Basil Pea Sauce

  • 1.5 cups of fresh or frozen peas, cooked
  • 2 T butter
  • 1/2 c. plain yogurt (the more fat the better, but regular is fine)
  • handful of fresh basil
  • salt and pepper
  • olive oil

Directions

    Combine all ingredients in a food processor and puree. Makes about 1.5 cups. Serve warm over corn and goat cheese pancakes as a starter.
