  • 1 envelope Unflavored gelatin
  • 1 cup Low-fat (1%) milk
  • 1/3 cup Firmly packed dark brown sugar
  • 3/4 cup Part-skim riccota cheese
  • 1/4 cup Unsweetened cocoa powder
  • 1 tbsp Orange liquor
  • 1 tsp Orange liquor
  • 1 tsp Vanilla extract

    In small saucepan sprinkle gelatin over milk

    Let stand until softened

    Stir in brown sugar

    Cook over medium-low heat stirring constantly about 2 minutes until gelatin is completely dissolved (do not boil)

    In blender combine riccota cheese cocoa powder orange liquor and vanilla extract

    Process on medium speed about 1 minute until pureed scraping down sides of container as necessary

    Reduce speed down to low

    Gradually add milk mixture process until combined

    Evenly pour pudding into each of four 6 ounce custard cups

    Cover with plastic wrap refrigerate until set at least 2 hours
