Ingredients

  • 1 1/2 c. sugar
  • 3 heaping Tbsp. flour
  • 3 Tbsp. plus 2 tsp. cocoa
  • pinch of salt
  • 1 c. water
  • 2 slightly beaten egg yolks
  • 1 small can evaporated milk
  • 2 Tbsp. butter
  • 1 1/2 tsp. vanilla
  • 1 baked pastry shell
  • meringue or whipped cream

Directions

    Mix together first 4 ingredients.

    Measure 1 cup of water and add only enough to the dry ingredients to make a paste.

    Blend into the paste, egg yolks, followed by the remainder of the water and evaporated milk.

    Cook over slow fire, stirring mixture frequently.

    Add butter during cooking process.

    When filling is thick (do not overcook), add vanilla.

    Pour into baked pastry shell and top with meringue or whipped cream.

    If topped with whipped cream, chill before serving.
