Chocolate Roll With Raspberries

- 5 eggs
- 6 ounces semisweet chocolate
- 2 tablespoons butter
- 2 tablespoons cognac or 2 tablespoons water
- 13 cup sugar
- 1 cup heavy cream
- powdered sugar
- 12 pint raspberries
Directions

1Heat oven to 350 degrees.

2Butter and line a 10x15 inch jelly roll pan with wax paper.

3Separate eggs.

4Cut chocolate into small pieces.

5Melt chocolate with butter and 2 tbsp cognac.

6Remove from heat and add egg yolks, one at a time, beating thoroughly.

7Set aside.

8Beat egg whites with pinch of salt until soft peaks form.

9Add sugar slowly.

10Continue beating till stiff.

11Fold egg white mixture into chocolate.

12Pour batter into pan, smooth top and bake for 15 minutes.

13Let cake cool; remove from pan onto work surface.

14Whip cream.

15Spread cream over the cake and roll up its long edge.

16Transfer to serving plate.

17Dust with powdered sugar and garnish with raspberries.
