Chocolate Walnut Sponge Cake

  • 10 eggs
  • 1 cup sugar
  • 1/2 cup meal cake
  • 1/4 cup potato starch
  • 1/2 teaspoon instant coffee
  • 1 teaspoon cocoa
  • 1/4 cup orange juice
  • 2 cups chopped walnuts
  • 3 chocolate bars semi-sweet, 1 1/2 oz. each
  • 1 teaspoon grated orange rind

    Beat yolks with 1 cup sugar.

    Sift dry ingredients.

    Add alternately with orange juice.

    Beat whites with a pinch of salt until almost stiff.

    Gradually add 1/3 cup sugar.

    Fold yolk mix into white mix.

    Fold in nuts, chocolate and rind.

    Bake ungreased tube pan at 325 degrees for 1 hour.
