Chocolate Zucchini Bread

Ingredients

  • 1/3 c. margarine
  • 4 Tbsp. plus 1 tsp. cocoa
  • 1/2 c. brown sugar
  • 1/2 c. white sugar
  • 1 egg, beaten
  • 1 c. unpeeled shredded zucchini
  • 1 c. flour (plain)
  • 2/3 c. nut meats
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla

Directions

    In a mixing bowl, cream 1/3 cup margarine with the cocoa and both sugars.

    Blend in beaten egg, flour, baking powder, salt and vanilla.

    Stir in zucchini and nuts.

    Blend thoroughly.

    Bake in 350° oven in 8 x 8-inch pan for 15 minutes or until top crust is dry and edges pull away from sides of pan.

    Interior will be moist.

    Cool and frost if desired.
