Ingredients

  • 1/4 lb. fine egg noodles or 1/2 lb. Chinese noodles
  • 3 large carrots, cut into thin strips
  • 4 medium onions, cut in halves, then thinly sliced
  • 1 lb. fresh mushrooms, sliced
  • 1/2 c. chopped and salted celery
  • 1/2 c. canned vegesteaks, cut into small strips
  • 6 green onions, cut into thin slivers
  • 1/2 clove garlic, minced
  • 2 Tbsp. soy sauce
  • 1 tsp. sugar
  • salt to taste

Directions

    Put Chinese noodles in boiling water 15 minutes.

    Drain; rinse in cold water and drain again.

    Set aside.

    Put 1 tablespoon oil in a skillet and when hot, add carrot strips.

    Fry until carrots are barely soft.

    Remove and set aside.

    Add more oil to skillet. When hot, cook onion slices the same way.

    Do same with mushrooms and set aside.

    Wash celery and fry.

    Add strips of steak, green onion slivers and minced garlic.

    Fry.

    Combine ingredients. Season with soy sauce.
