  • 1 1/2 c. unsifted flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1/4 tsp. nutmeg
  • 1 c. sugar
  • 3/4 c. corn oil
  • 2 eggs
  • 1/2 tsp. vanilla
  • 2 c. peeled and coarsely chopped apples (about 2 medium)
  • 1/2 c. chopped walnuts

    Grease and flour a loaf pan (8 1/2 x 4 x 2 1/2-inch).

    On wax paper thoroughly stir together the flour baking soda, salt and spices.

    In a large mixing bowl beat together until smooth the sugar, corn oil, eggs and vanilla.

    Slowly beat in the flour mixture; stir in apples and nuts.

    Turn into prepared pan.

    Bake in a preheated 350° oven until a cake tester inserted in center comes out clean, 1 1/4 hours.

    Cool on wire rack 10 minutes, then turn out on pan.

    Cool completely before slicing.
