Ingredients

  • 2 tablespoons apricot preserves
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh orange juice
  • 1/2 teaspoon dried hot red pepper flakes
  • 1/2 lb jicama, peeled and cut into 1/3-inch dice (1 cup)
  • 1/4 lb English cucumber, cut into 1/3-inch dice (1 cup)
  • 1 red bell pepper, cut into 1/3-inch dice
  • 1/2 cup chopped red onion
  • 4 cups shredded romaine
  • 1 cup radish sprouts
  • 1/3 cup chopped fresh cilantro
  • 1 1/2 teaspoons cumin seeds, toasted

Directions
