- 6 pork chops
- 2/3 c. uncooked rice
- 1 c. water
- 2 tsp. salt
- 1/2 c. chopped onion
- 1 can chopped tomatoes
- 1 c. whole kernel yellow corn
- 1/4 tsp. black pepper
Directions

1Trim fat from chops.

2Fry in a large skillet; add chops and brown very slowly on both sides.

3Leave out.

4Add water; sprinkle with salt and arrange chops over rice.

5Sprinkle with remaining salt.

6Add onion and tomatoes.

7Spoon on corn; sprinkle with pepper.

8Bring to a boil.
-
9Turn heat down to low and cover and simmer 25 to 35 minutes or until rice is tender.

10Add small amount of water if mixture cooks dry.
