  • 1 doz. medium size onions
  • 1 doz. sweet peppers
  • 1 doz. red peppers
  • 4 qt. chopped cabbage
  • 4 qt. chopped green tomatoes
  • 1/4 c. salt
  • 5 c. sugar
  • 4 Tbsp. ground mustard
  • 4 Tbsp. mustard seed
  • 1 tsp. ground turmeric
  • 1 tsp. ground ginger
  • 3 Tbsp. celery seed
  • 2 1/2 c. vinegar
  • 2 Tbsp. whole mixed spice, tied in a bag

    Chop onions and peppers fine.

    Combine with cabbage and tomatoes; mix with salt.

    Let stand overnight.

    Drain well. Combine sugar, spices and vinegar.

    Bring to a boiling point and simmer 20 minutes.

    Add vegetables and simmer to consistency desired.

    Remove spice bag.

    Pack in hot jars and seal.
