Ingredients

  • 1 peck green tomatoes
  • 8 large onions
  • 10 green bell peppers
  • 3 Tbsp. salt (pickling)
  • 6 to 8 hot peppers
  • 1 qt. vinegar
  • 1 Tbsp. cinnamon
  • 1 Tbsp. allspice
  • 1/4 tsp. cloves
  • 1 3/4 c. sugar
  • 1/2 c. horseradish (optional)

    Chop tomatoes, onions and peppers together and cover with the salt.

    Let set overnight.

    Drain.

    Add hot peppers, vinegar, spices (tied in a cloth bag) and sugar.

    Allow to boil slowly until tender, about 15 minutes.

    Add the horseradish at this time. Pack in pint jars.

    Put on lids tight.

    Process in boiling water bath 5 minutes.

    Makes 6 pints.
