- 1 peck green tomatoes
- 8 large onions
- 10 green bell peppers
- 3 Tbsp. salt (pickling)
- 6 to 8 hot peppers
- 1 qt. vinegar
- 1 Tbsp. cinnamon
- 1 Tbsp. allspice
- 1/4 tsp. cloves
- 1 3/4 c. sugar
- 1/2 c. horseradish (optional)
Directions

1Chop tomatoes, onions and peppers together and cover with the salt.

2Let set overnight.

3Drain.

4Add hot peppers, vinegar, spices (tied in a cloth bag) and sugar.

5Allow to boil slowly until tender, about 15 minutes.

6Add the horseradish at this time. Pack in pint jars.

7Put on lids tight.

8Process in boiling water bath 5 minutes.

9Makes 6 pints.
