Ingredients

  • 1/2 gal. chopped cabbage
  • 8 green sweet peppers
  • 8 red sweet peppers
  • 1 qt. green tomatoes
  • 2 1/2 c. sugar
  • 1/4 c. salt
  • 2 to 3 qt. vinegar
  • 2 Tbsp. ground mustard
  • 1 Tbsp. turmeric
  • 1 Tbsp. ground ginger
  • 1 Tbsp. mustard seed
  • 2 Tbsp. mixed whole spices

    Chop all vegetables.

    Soak overnight in 1/4 cup of salt.

    Be sure water covers the vegetables.

    In the morning, drain all the salt water off of the vegetables.

    Place all spices in a cheesecloth bag.

    Boil for 10 minutes in the vinegar (use a large pot).

    Remove spice bag from vinegar.

    Add sugar and mix well.

    Add all vegetables.

    Stir in well.

    Bring to a boil, then turn stove off.
