Ingredients

  • 10 large green tomatoes
  • 4 c. ground onion
  • 4 c. ground cabbage
  • 6 red bell peppers
  • 6 green bell peppers
  • 1/2 c. salt
  • 6 c. sugar
  • 2 c. water
  • 4 c. vinegar
  • 1 Tbsp. celery seed
  • 2 Tbsp. mustard seed
  • 1 1/2 tsp. turmeric

Directions

    Grind tomatoes and mix with other ground vegetables. Sprinkle with salt and let stand overnight.

    Rinse and drain. Combine remaining ingredients and bring to a boil.

    Add vegetables and simmer for 4 minutes.

    Do not overcook. Pour into sterilized jars and seal.

    Process in hot water bath (212°) for 5 minutes. Remove jars and complete seal.
