- 1 1/2 c. celery strips
- 1 large onion, cut into small wedges
- 1 c. pepper strips
- 1 clove garlic
- 2 Tbsp. oil
- 3/4 to 1 lb. ground beef
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. cornstarch
- 1 1/3 c. water
- 2 Tbsp. soy sauce
- 1 1/2 c. boiling water
- 1 1/2 c. instant rice
- 1/2 tsp. salt
Directions

1Saute first four ingredients in oil.

2Remove from the saute pan.

3Then brown the ground beef with 1 teaspoon salt and pepper. Drain off any fat.

4Combine cornstarch with water.

5Mix with soy sauce.

6Add to meat and vegetables.

7Cook and stir until thickened. Move mixture to the side of the pan.

8Add boiling water and instant rice; add 1/2 teaspoon salt.

9Cover and remove from heat; let stand for 5 minutes.

10Fluff with fork; then serve.
