Ingredients

  • 1 1/2 c. celery strips
  • 1 large onion, cut into small wedges
  • 1 c. pepper strips
  • 1 clove garlic
  • 2 Tbsp. oil
  • 3/4 to 1 lb. ground beef
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. cornstarch
  • 1 1/3 c. water
  • 2 Tbsp. soy sauce
  • 1 1/2 c. boiling water
  • 1 1/2 c. instant rice
  • 1/2 tsp. salt

Directions

    Saute first four ingredients in oil.

    Remove from the saute pan.

    Then brown the ground beef with 1 teaspoon salt and pepper. Drain off any fat.

    Combine cornstarch with water.

    Mix with soy sauce.

    Add to meat and vegetables.

    Cook and stir until thickened. Move mixture to the side of the pan.

    Add boiling water and instant rice; add 1/2 teaspoon salt.

    Cover and remove from heat; let stand for 5 minutes.

    Fluff with fork; then serve.
