  • 1 lb. chow mein meat (beef, cubed, or pork)
  • 2 c. diagonally sliced celery (1/2-inch slices)
  • 1 medium onion, sliced
  • 1 (4 oz.) can mushrooms stems and pieces, drained
  • 3 Tbsp. cornstarch
  • 3 Tbsp. soy sauce
  • 1 (16 oz.) can chow mein vegetables or bean sprouts, rinsed and drained
  • 1 (8 1/2 oz.) can water chestnuts, drained and sliced
  • 1/2 tsp. ginger

Directions

    Combine chow mein, celery, onion, and mushrooms in a 2-quart casserole dish.

    Cover.

    Microwave 6 to 10 minutes on High or until meat is set.

    Dissolve cornstarch in soy sauce.

    Stir into meat mixture.

    Mix in chow mein vegetables, water chestnuts and ginger. Cover.

    Microwave for 6 to 10 minutes on High, or until vegetables are tender-crisp.
