  • 6 oz. or 1 1/2 c. flour
  • 8 oz. margarine or butter
  • 8 oz. sugar
  • 4 eggs
  • 1 lb. raisins
  • 1 tsp. cinnamon
  • 1/2 tsp. mixed spice
  • 1/2 tsp. salt
  • 4 oz. mixed peel
  • 4 oz. cherries
  • 1/2 lb. prunes, chopped
  • 1 c. wine
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • finely grated rind of 1 lemon
  • 2 Tbsp. browning

Directions

    Cream butter, sugar and browning until soft and fluffy.

    Sieve all dry ingredients together.

    Beat eggs, sherry, brandy or milk together.

    Add egg mixture to creamed butter and sugar.

    Add fruits.

    Fruits should be lightly floured, if sticky.

    Add flour and fold in.

    Do not overbeat when mixing.

    Bake at 350° for 1 1/2 hours or steam for 2 hours.

    Yields a 9-inch round or 8-inch square cake.
